Aim:
I want to find out the best way to cool down your tongue after eating hot chilli.
Method:
Equipment
- Hot Chilli Sauce
- Popsicle Stick
- Drinks - Soda, Water, Milk
- Timer
Instructions
1. Get your equipment ready.. obviously.
2. Get a drop of hot saucy on your Popsicle stick.
3. Lick the Hot Chilli sauce.
4. Optional - swirl the sauce around your mouth.
5. Start the timer.
6. After two minutes, drink your soda, milk or water.
7. After five minutes, how hot is your mouth?
8. Repeat the experiment but with a different drink.
Results:
The Carolina Reaper lives up to its name.
After the first chug of water and the first dose of the death, I rated it a 10 for burning.
After the second time, I scored it a 10.
After the third time, with coke, I scored it a 9.5.
After the fourth time, with milk, I scored it a 0.5.
Discussion
Why does chilli burn your mouth?
The alkaline (oil based molecules) triggers the temp sensitive pain receptors in your mouth which then sends a message to your brain that is basically screaming "IT HURTS, IT HURTS!!".
Why did the milk reduce the burn?
Milk hosts a handy protein called casein, which helps dissipate the alkaline in the chilli, thus killing off the taste quickly.
